What should you say?

This past weekend was a disaster in manners.  We had breakfast with Chris' group at work.  The entire drive there (which was at least 20 minutes) I prepped Neland.  We talked about saying, yes sir and yes ma'am.  We even went over who was a sir and who was a ma'am.  Neland is a child who needs to know what is expected and what the plan is for the day (he definitely gets this from his momma).  We'd planned on driving up to Chris' office, meeting everyone there and then going to a local pancake restaurant.  On the drive there, Chris called and said everyone was outside.  This upset Neland (mainly because he knows exactly where the drawer of lollipops is on the 4th floor).  We drove up and Chris saw him in tears and ran back up to the office to bring him a treat (totally not my call, but I understand he was trying to keep the crazy 3 year old things to a minimum).  The breakfast location had also changed.  When we arrived, there were no pancakes on the menu.  We tried to convince Neland that crepes were just like pancakes.  He was even lucky enough to get a nutella crepe.  Did he eat it - no.  Instead he ate most of Chris' waffle (and Teague at the rest) and refused to give up his nutella crepe.  Drawing with his finger in the chocolate was just too much fun.  On top of this, he looked away every time there was a question, and it seemed like he completely forgot the word "yes" existed with all the "yeas" that came out of his mouth.  To say that I was embarrassed is an understatement.  Luckily the people we were dining with love kids and when I refused to carry Neland out of the restaurant and a meltdown was starting, it was Chris' boss that scooped him up and made him laugh.  Needless to say the ride home was a lecture on manners.  As a side note, Chris attributes his behavior to his lack of sleep recently.  He has been waking up at night scared of the dark, or the shadows, or the big N in his room... basically anything (tonight in the bath he told me he's scared of the nails that are still in the wall from the big N - since the big N is now in my room). 
On Sunday morning we had a photo session with our favorite photographer.  We woke up really early so we could have an excited train ride to uptown and even grab Starbucks on the way.  Neland was so excited.  We gave him very specific instructions to listen to Miss Tracey, to answer with "yes ma'am", and use "please" and "thank you".  Pictures were a lot of fun.  We went to a park uptown that had a lot of artwork that was fairly climbable.  Neland was having a blast.  At one point Miss Tracey asked him of he wanted to see another piece of artwork and he said "yes" but forgot the ma'am.  So both Chris and I at the same time said "Neland, what do you say?"  Neland's response, "oh, cheese."
Neland totally redeemed himself with lunch on Wednesday with one of Chris' coworkers and her boyfriend.  I was very proud of him! Now hopefully it will stick!
